These fries are great if you’re making burgers or if you’re just in the mood for some french fries! They’re super simple and so delicious! It’s a great side with any meal.

Ingredients

This delicious side dish only takes three ingredients–potatoes, oil, and salt–so easy! For the potatoes, you can get a plain bag of russet potatoes from the store and slice them up yourself, but if you’re anything like me, your time is valuable, and having to cut up the potatoes is just enough of a hurdle to keep you from making fries regularly. If you’re not like me, you can instead choose to just go through a fast food place and get some fries (due to some health struggles, I can’t eat seed oils. If you want to know more about how I avoid them, check out this post). Since the name of the game is being healthier (in my book avoiding seed oils is one of the healthiest things you can do), ideally we want to reduce any friction that would prevent you from making simple things from scratch. That’s a long way of saying I like to buy pre-cut fries from Azure Standard. The only ingredient is potatoes and I can just keep them in my freezer and when I want to make some fries I pull them out, all-in, it takes less than 20 minutes!

As for oil, this one’s the key to making healthy(er) fries. I generally use beef tallow because it’s the cheapest and easiest healthy oil for me to source. I either render my own or get this kind from Amazon. And for salt, I like Redmond Real Salt, but any unprocessed salt will work.

Instructions

Deep-frying can seem intimidating if you’ve never done it, but It’s really not hard or complicated once you get the hang of it. Start by heating about 32oz of beef tallow or pork lard in a medium/large sauce pan over medium/high heat. You want to bring the oil to a temp of about 380 degrees. You can use any kitchen thermometer to check this, but one that attaches to your pot works best. This is the one I have

Once your oil is at 380, carefully put about 1 and 1/2 to 2 pounds of fries in your sauce pan. If you’re using frozen fries, make sure to do this a little at a time so it doesn’t boil over and cause a grease fire (if you ever have a grease fire you can throw a bunch of flour on it to smother it, or spray it with a fire extinguisher. Never use water!!!). You can do this with your hands or with a wire metal straining spoon. If you’re using a spoon, place the fries in the spoon, then lower them into the oil and repeat until all the fries are submerged. Let the fries cook until golden brown, stirring occasionally. This will generally take about 8 minutes.

Using a  wire metal straining spoon, carefully remove the cooked fries and place them in a glass bowl. Quickly sprinkle with salt to taste (you have to do this quickly so the salt will stick to the fries). Serve with the best Homemade Seed-Oil-Free Ranch Dressing and enjoy!
