Pickled Red Onions

- 1 large red onion
- ½ cup sugar
- 1½ cups vinegar
- 1½ cups water
Combine water, vinegar, and sugar in a small saucepan over medium heat, stirring occasionally until it boils.

While your vinegar mixture is heating up, slice your onion into thin slices.
1 large red onion
Put your onion slices into a quart mason jar.
Once your vinegar mixture comes to a boil, remove from heat and carefully pour over your onions.
Once the mixture cools, put a lid on your mason jar and store it in the fridge.
Let your onions rest for at least an hour before serving.
