I love pickled red onions! I try to put them on anything that I can. They add such an incredible flavor to sandwiches, tacos, nachos, a salad, and so many other things! Plus they store great in the fridge! You can feel confident storing them for at least a week, but honestly, I’ve used them after a month and they were still great. Use your eyes and nose if you’re worried, and worst case make a new batch!
I like to store my pickled onions in a quart mason jar. You can serve pickled onions immediately after making them, but for the best flavor, you want them to have at least an hour to rest before serving.
Ingredients
This one is super easy since it has only four ingredients–water, sugar, vinegar, and a red onion. You can use a sugar alternative if you would like, but it will change the flavor. For the vinegar, you can use regular white vinegar, or apple cider vinegar. I generally use white vinegar because I usually always have it in bulk at my house, but the apple cider vinegar does give a nice flavor. Try them both and pick your favorite!
Instructions
This recipe comes together with minimal effort. Start by combining your water, vinegar, and sugar in a small sauce pan on medium heat until it comes to a boil, stirring occasionally.
While the vinegar mixture is heating up, slice your onion. You want to slice it into thin strips.
Place the onion in a quart mason jar.
Once the vinegar mixture is boiling, carefully pour it over the onions. If you have a jar funnel, it helps a lot at this step.
The mixture should fill the jar and cover the onions. If it doesn’t push the onions down into the mixture, or add a little more water to the top.
Once the mixture is cool, put the lid on it, and stick it in the fridge. Let it rest for at least an hour before serving. Enjoy!

- 1 large red onion
- ½ cup sugar
- 1½ cups vinegar
- 1½ cups water
Instructions
- Combine water, vinegar, and sugar in a small saucepan over medium heat, stirring occasionally until it boils.½ cup sugar, 1½ cups vinegar, 1½ cups water
- While your vinegar mixture is heating up, slice your onion into thin slices.1 large red onion
- Put your onion slices into a quart mason jar.
- Once your vinegar mixture comes to a boil, remove from heat and carefully pour over your onions.
- Once the mixture cools, put a lid on your mason jar and store it in the fridge.
- Let your onions rest for at least an hour before serving.
